I thought the avocado salsa needed a little sweetness, and it turned out the pineapple was the perfect complement to the ‘cado and lime.
Now it’s my favorite summer salsa – perfect for cooling down your tongue when paired with an otherwise spicy steak rub. (P.S. Aww hey like my new butcher block countertop and tile backsplash??? It’s Mr. Peaches’ proudest accomplishment in life.)
Avocado Pineapple Salsa
- 1 ripe pineapple, peeled, cored and diced
- ΒΎ cup diced red onion
- Β½ of a jalapeΓ±o, seeded and minced
- Β½ tsp. sea salt
- 1 Tbsp. minced fresh cilantro
- 3 Tbsp. fresh lime juice
- 3-4 avocados, peeled, cored, and diced
Combine all ingredients gently in a bowl and serve immediately.
