I’m so excited that fall is finally here. Time for cozy sweaters and leggings and snuggly boots. But no matter how cold it gets I am always in the mood for a smoothie.
This pumpkin concoction is my favorite smoothie to enjoy in the fall and winter months, especially since I don’t have to worry about having fresh fruit on hand. Enjoy!
- 1/4 c. pure pumpkin puree
- 3/4 c. coconut water (or substitute almond milk)
- 1 banana, sliced and frozen (or use fresh and add a little more ice)
- 1/2 c. ice cubes
- 1 drop vanilla extract
- 1/2 tsp. raw honey
- pinch of cinnamon
- Optional add-ins: 1-2 Tbsp. gelatin (helps promote collagen production), scoop ofΒ vanilla protein powder, and/or top with pecans
Add all ingredients to a blender and blend until smooth. Add more ice or coconut water as needed to achieve desired consistency.
